Scott completed his initial training at the Sydney Opera House; after which he travelled overseas. Scott then acquired a position at the Hotel Inter-Continental where he finished as a Sous Chef for Tony Bilson in the Fine Treasury Restaurant. Scott left Tony to take on a Head Chef position with Neil Perry at the Museum of Contemporary Arts at Circular Quay, where Scott co-ordinated the Cafe, Rockpool Catering & Special Events.
Having decided that ‘the country’ would be a better place for his young family, he jumped at the chance to purchase The Wineglass Bar & Grill in Mudgee, and developing the Cobb & Co Court Boutique Hotel.
The Cobb & Co Court is one of the oldest known original hotel buildings still standing in Mudgee. The section currently housing The Wineglass still retains the original shingle roof underneath the iron, and the beautiful old hand mortised and plugged beams can still be seen in the upstairs section of the Restaurant.
Built in the late 1850s, it was well known as an overnight stop for the Cobb & Co Royal Mail Coaches. It was a substantial brick building, with the restaurant section being used to house the Cobb & Co coaches and store fodder for the horses.
For 2 shillings a traveler could obtain bed and breakfast, and it cost 8 shillings to stable 2 horses.
